Penne in Spicy Cream Sauce

I know. Another recipe. I can't help it. I've had free time and have taken the chance to actually enjoy cooking. I really do like to cook when I can take the time to do it correctly.

Ingredients:
olive oil
butter
1 can crushed tomatoes
heavy whipping cream
white wine or vodka
penne pasta
minced garlic
one onion
salt
pepper
parmesan
Italian sausage or kielbasa or shrimp
parsley (fresh is better, but dry is ok)
basil (fresh is better, but dry is ok)
crushed red pepper
other Italian herbs if you so choose

First sautee the onion and garlic in a little olive oil and butter until the onion is translucent and the garlic is golden in a pan. Set the onion/garlic aside. Then slice and brown the sausage in olive oil and butter. Sprinkle salt, pepper, and red peppers on the sausage while it browns. Set aside the sausage.
Allow the remaining oils and juices to cook on their own for 30 seconds or so, then add the white wine or vodka to deglaze the pan. Simmer until the alcohol is gone and scrape the bottom of the pan to get up all of the flavor. Add the crushed tomatoes. Add chopped parsley, basil, crushed red peppers (to taste - don't overdo it if you don't like spiciness), salt, pepper, and other desired spices. Add the onion, garlic, and sausage back to the tomato. Simmer for 10 minutes. Add cream (as desired). Stir and allow to simmer for about 10 more minutes. Boil some water, salt, and oil in a pot while you wait.
Cook the penne pasta. Drain. Add to the sauce and stir. Then serve!
